Super Simple Curry

    This is called a curry for the flavour not the heat and is a great way to use up left overs from a roast of any meat really.

    Serves: 4 

    • oil
    • onion, chopped
    • 1-2 green apples, cubed
    • 500g cooked meat, cubed
    • 1 tablespoon curry powder (I use mild)
    • 2 teaspoons stock powder (use whatever suits your meat best)
    • 1 1/2 cups of water
    • sultanas

    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Heat oil in a frying pan and lightly fry the onion.
    2. Add apple and meat and slightly brown apple.
    3. Add curry powder and stock, then water and sultanas.
    4. Simmer gently for about 30min reducing the sauce.
    5. While the curry is simmering I prepare the rice.
    6. Serve.


    This recipe could be used with uncooked meat by flouring the meat and extending the cooking time to 1.5 to 2 hours.
