Sugar free, delicious, filling and healthy. Eat this with yoghurt and grated apple, or sliced banana etc.
3 tablespoons coconut oil (find this at a health food store)
sweetner if required - I use sucaryl liquid, approx 10 drops
4 cups of coconut flakes
3 tablespoons chia seeds (white) (find these at a health food store)
1 1/2 teaspoons cinnamon
2 1/2 to 3 cups roughly chopped nuts (pepitas, cashews, almonds, pecans, walnuts etc) you can also use seeds such as pumpkin, sunflower seeds too.
- Melt (if needed) the coconut oil and mix in the sweetner if you are using it.
- Add all ingredients to a bowl and pour over the coconut oil mix, stir to coat.
- Pour into a baking tray lined with baking paper.
- Bake in a pre-heated oven at 120 degrees C for approx 25-30 minutes, taking care to stir to prevent edges buring.
