Nachos with Mince

    I made these up at uni cooking cheap semi-healthy meals for the flat and it scales up well to feed the masses.

    Serves: 4 

    • 500g mince
    • 1-2 chopped onions
    • 1 can of chopped tomatoes
    • 1 can of chilli beans (mild to hot, your choice)
    • 1 carrot - grated
    • 1 sachet nacho mix
    • corn chips
    • pot of sour cream
    • grated cheese

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Fry mince until brown.
    2. Add onion and fry until clear.
    3. Add tomatoes, beans, carrot and nacho mix and simmer until heated through and sauce is reduced.
    4. Place corn chips into bowls. Add mince mix on top then sour cream and cheese.


    the website has assigned "serves 4" but you would have to be 4 hearty eaters to get through this. When I make it there is enough to feed my family of 4 and have enough for another nights meal to go in the freezer.
