- 500g mince
- 1-2 chopped onions
- 1 can of chopped tomatoes
- 1 can of chilli beans (mild to hot, your choice)
- 1 carrot - grated
- 1 sachet nacho mix
- corn chips
- pot of sour cream
- grated cheese

- Fry mince until brown.
- Add onion and fry until clear.
- Add tomatoes, beans, carrot and nacho mix and simmer until heated through and sauce is reduced.
- Place corn chips into bowls. Add mince mix on top then sour cream and cheese.
Tip
the website has assigned "serves 4" but you would have to be 4 hearty eaters to get through this. When I make it there is enough to feed my family of 4 and have enough for another nights meal to go in the freezer.
