This was a meal I started doing when flatting at uni - easy and cheap. I have tweaked it over the years to add more flavour to it.

Serves: 4 

  • 1 onion - chopped to your preference
  • crushed garlic - to your taste
  • 500g mince
  • 1 can of tomatoes (or 4-5 peeled fresh ones), chopped
  • 2 tablespoons tomato paste
  • herbs - basil, oregano, thyme - fresh or dried (or mixed herbs works too)
  • 250g lasagne pasta ( small curled edge or you could use sheets)
  • pot of sour cream
  • grated cheese
  • oil for cooking in

Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

  1. Heat oil in frying pan add onion and garlic, cook until onion is clear.
  2. Start water for pasta.
  3. Add mince to the cooking onion and brown.
  4. Add tomatoes, tomato paste and herbs to the mince and simmer until liquid is reduced to a sauce.
  5. Heat oven to 200 degrees C.
  6. Add pasta to boiling water and cook following packet directions.
  7. Once pasta is cooked and mince mixture is ready assemble in a deep casserole dish. Divide pasta into 3 lots and the mince into 2. Then assemble as follows. First layer pasta, then mince then dollops of sour cream then a handful of grated cheese, pasta, mince, sour cream, cheese, pasta, sour cream, cheese.
  8. Bake until the top cheese is bubbly and browning - could grill instead.
  9. Serve.


I have also added things like red wine to the mince for different flavour so just try whatever you feel.
