Lemon Self Saucing Pudding

    Serves: 6 

    • 50g butter
    • 200g caster sugar
    • 1 lemon, zested
    • 100ml fresh lemon juice
    • 3 eggs, separated
    • 50g plain flour
    • 250ml milk
    • icing sugar, to serve

    1. Preheat the oven to 180 degrees C. Butter a baking dish.
    2. In a food processor combine the butter, sugar and lemon zest then process until smooth and creamy. Add in turn the lemon juice, egg yolk, flour and milk. Combine to a smooth batter.
    3. Whisk the egg whites until firm but not stiff then fold the two mixtures together.
    4. Pour the batter into the prepared baking dish then place it in a tray half filled with water. Place in the preheated oven and cook for 45 minutes to until the top is lightly browned. Dust with icing sugar and serve hot.

    I had not tried a lemon self saucing but this was lovely and light. Easy to make. 100ml lemon juice was more than 1 lemon though unless the lemon is really juicy.  -  05 Jun 2014
