Watercress Waldorf Salad

My version of this classic salad differs in that for the dressing, I use apple juice and yoghurt mixed in with the mayonnaise.


Serves: 4 

  • 3 tart apples - peeled, cored and chopped
  • 1 tablespoon lemon juice
  • 175g seedless grapes
  • 2 stalks celery, chopped
  • 2 spring onions, chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons natural yoghurt
  • 3 tablespoons apple juice
  • 1 bunch watercress, trimmed and chopped
  • 2 tablespoons chopped walnuts
  • salt, to taste

  1. In a large bowl, combine the apples and lemon juice. Add the grapes, celery and spring onions; toss.
  2. In a small bowl, whisk together the mayonnaise, yoghurt and apple juice. Season to taste with salt.
  3. Spoon over the apple mixture and toss gently.
  4. Wash the watercress and dry thoroughly. Arrange greens on individual salad plates. Mound the apple mixture on top and sprinkle with the walnuts.

The tartness of the apples, and the sweetness of the grapes are good complements to the peppery watercress. The yogurt and apple juice dressing lighten what traditionally is a very heavy dressing on waldorf salads. All of the ingredients work well together, resulting in a fresh, crisp and light salad. - 22 May 2013
