Cayenne Butter Cookies

    When I first had these I thought they were just normal butter cookies but quickly found the cayenne, now I willingly cook and munch out on them whenever I am looking for something a bit more savoury.

    Serves: 12 

    • 2 cups wholemeal self raising flour
    • pinch of salt
    • 1/4 teaspoon cayenne pepper
    • 180g butter, softened
    • 1/2 cup sugar
    • 1 egg, lightly whisked

    1. Preheat oven to 180 degrees C.
    2. Sift the flour, salt and cayenne into a bowl then rub in the butter until it resembles breadcrumbs. Add the sugar and whisked egg and mix into a stiff dough.
    3. Turn out the dough onto a floured surface and knead gently until smooth. Wrap in plastic wrap and chill in the fridge for about 30 minutes.
    4. Roll out on a floured surface until about 5mm thick then cut into about 30 biscuits. Place on a greased baking tray and use a fork to give some character. Place in oven at 180 degrees C for about 12-15 minutes or until golden.
