    This is a great side if you are looking for something a bit bold or can even be used as a main component of a vegetarian meal.

    Serves: 6 

    • 1 head cauliflower
    • 3 cups béchamel sauce
    • 1 cup grated cheddar cheese
    • 1 tablespoon diced parsley

    1. Boil or steam the cauliflower until soft then drain and cool.
    2. Place a thin layer of béchamel sauce on the bottom of a ceramic or glass dish. Place florets of the cauliflower on top then cover with the remaining béchamel sauce.
    3. Sprinkle the top with the grated cheese then the parsley. Bake in an oven preheated to 220 degrees C until the cheese has melted and is starting to brown.
    4. Remove from the oven and serve immediately for a sloppy style presentation; or chill overnight and reheat for a firm piece that holds together well.
