Place the noodles in boiling water off the heat to warm through and soften.
Heat a wok, add the oil then chicken and stir fry until white on all edges. Add the carrot, onion and cabbage and cook while stirring. When cooked add the noodles and stir to combine.
Push the noodles, chicken and vegetables up the side of the wok then add the second lot of oil, closely followed by the egg. Stir to cook the egg until scrambled then slowly mix in the noodles, chicken and vegetables until all combined. Season to preferred taste as required with the soy sauce.
