    The mix of grains in this recipe - buckwheat, brown rice and brown lentils - give a great variety of textures.

    Ingredients
    Serves: 2 

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 cloves garlic, chopped
    • 1/3 cup buckwheat
    • 1/3 cup brown rice
    • 1/3 cup brown lentils
    • 2 bay leaves
    • 1/2 teaspoon oregano
    • 1/2 teaspoon basil
    • salt to taste
    • black pepper to taste
    • 1 teaspoon tamari

    1. In a cast iron pot, heat the olive oil then saute the onion until clear. Add the garlic and cook a minute more.
    2. Add the buckwheat, rice and lentils and stir until they become glossy. Add water to cover by about 2-3 cm, then add the spices, salt, pepper and tamari.
    3. Bring to the boil then cook over very low heat for 30-40 minutes or until the grains are done.
