Easy Chickpea Burgers

    A chickpea burger is a good alternative. Slap them on at your next barby or fry them up for lunch or dinner.

    Serves: 12 

    • 650g tinned chickpeas
    • 1 onion, chopped
    • 1 tablespoon dried thyme, or to taste
    • salt and freshly ground black pepper to taste
    • 3/4 cup dried breadcrumbs
    • 2 eggs, beaten
    • 4 tablespoons vegetable oil

    1. Working in small batches, add the chickpeas to a blender or food processor and mix to a purée. Add onions, thyme, salt and pepper to the mixture and mix well. Mix in breadcrumbs and egg and blend. Form the chickpea mixture into burgers.
    2. Heat oil in a large frying pan over medium heat. Fry burgers until each side is golden brown 6-7 minutes each side.

    Used different ingredients. I added a tablespoon of tomato paste and morroccan spice, also some sesame seeds and a grated carrot just for a different flavour.  -  20 Apr 2009


    Something else. I used this recipe as a base. I added a tablespoon tomato puree, 2 garlic cloves, 6 drops extremely hot kiwifruit chili sauce (kaitati fire?) parsley and about teaspoon basil. It was also necessary to use more breadcrumbs.  -  30 Jun 2010
