This is a quick vegetable pie. The measurements are a little approximate. I've also had good luck substituting tofu for the cottage cheese and grated cheese.


Serves: 2 

  • 1 bunch spinach, washed and chopped
  • 1 capsicum, chopped
  • 2 onions, chopped
  • 1 cup cottage cheese
  • 2 eggs
  • fresh herbs to taste
  • grated ginger, to taste (optional)
  • crushed garlic, to taste (optional)
  • grated cheese, to top

Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

  1. Place spinach, capsicum and onion into a baking dish.
  2. Make a puree of cottage cheese, eggs and herbs and pour over the raw spinach mixture. Cover with grated cheese.
  3. Bake in a 180 degrees C oven for 30-40 minutes.
