Delicious chocolate cake that gets rave reviews when shared!

Makes: 1 cake

  • 3 cups self-raising flour
  • 2 cups sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 cup cocoa powder
  • 200g butter, softened
  • 1 cup milk or unsweetened yoghurt
  • 3 large eggs
  • 1 cup boiling hot coffee made with 4 heaped tsps instant coffee

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Heat oven to 160°C. Line the base and sides of a 30cm round cake tin with baking paper.
  2. Place all ingredients in a bowl or food processor and mix until the ingredients are combined.
  3. Pour mixture into prepared tin.
  4. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Allow to cool in the tin.
  5. If not using at once, the cake will keep for about a week in a sealed container in the fridge (highly unlikely though, this cake is too good!). You can also freeze.


Ice with chocolate ganache icing and top with raspberries or strawberries.
