Chinese Crab and Beansprout Omelettes

    Quick and easy crab omelettes, just combine all the ingredients and fry! Serve with white rice and oyster sauce.

    Serves: 4 

    • 200g tinned crabmeat, drained
    • 8 eggs, beaten
    • 90g beansprouts
    • 2 tablespoons cornflour
    • 2 spring onions, finely chopped
    • 1cm fresh ginger, peeled and grated
    • 1 clove garlic, crushed
    • 2 teaspoons dry sherry
    • 1 tablespoon soy sauce
    • 1/2 cup vegetable oil, for cooking
    • oyster sauce to taste

    1. Combine the crabmeat with all the other ingredients except vegetable oil and oyster sauce.
    2. Heat 2 tablespoons oil in a wok or frying pan, pour in 1/4 cup omelette mixture and cook until just set. Turn the omelette and cook a minute more.
    3. Place on warm serving plates in a low oven while cooking remaining omelettes. Serve with oyster sauce on the side.
