    Tried this last night because there was literally nothing else in the pantry and instant family favorite. This is not for the Thai food purist's, just for the time poor

    Serves: 4 

    • 500g beef chopped into 1 inch cubed
    • 1 - 2 tbsp red curry paste (I use the ALDI brand)
    • 1 can coconut cream
    • 1 onion, sliced thinly
    • 2 carrots, sliced thinly
    • 1 zucchini, sliced thinly
    • 1 cup frozen cut green beans
    • 1 tbsp fish sauce

    1. Add the beef, curry paste and coconut cream to the slow cooker and combine.
    2. Cook on high for 3 1/2 to 4 hours or on low for 6 to 8 hours.
    3. Half an hour before you want to serve, add vegetables stir to combine. Cook on high for half and hour. Now is a good time to put the rice on to cook.
    4. Add the fish sauce, season to taste and serve over steamed rice.


    Chop the vegetables as thinly as possile so they cook in the slow cooker in 30 minutes
