Butter, honey and sugar all combined with rice bubbles then sliced into bars. Such an easy treat for school fetes, kids lunch boxes and after school snacks.

Ingredients
Makes: 18 bars
- 125g butter, chopped
- 1/2 cup (110g) caster sugar
- 2 tablespoons honey
- 1 teaspoon vanilla essence
- 5 cups rice bubbles

- Line a 20cm x 30cm slice tin or baking dish with baking paper.
- Stir butter and sugar in a small saucepan over medium-high heat until sugar dissolves. Bring to a boil. Stir in honey then boil for about 4 minutes. Stir in vanilla then remove from heat.
- Place rice bubbles in a large bowl then pour in butter mixture. Mix well. Spoon into prepared tin. Press down flat with a rubber spatula then allow to set before slicing.
