Banana Coffee Cake

    Delicious cake made with mashed banana and instant coffee. Baked into a cake or cupcakes then iced with your favourite icing. Enjoy.

    Serves: 8 

    • 1 1/2 cups plain flour
    • 1/2 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 dessertspoon instant coffee
    • 1/4 cup milk, warm
    • 130g butter
    • 3/4 cup white sugar
    • 1 egg
    • 2 bananas, mashed

    1. Preheat oven to 180 degrees C. Grease and flour a cake tin.
    2. Sift together flour and baking powder. Dissolve baking soda and coffee in the hot milk then set aside to cool. Cream together butter and sugar. Beat in egg, banana and the milk. Stir in the flour then mix until well combined.
    3. Pour into prepared tin then bake in preheated oven for 30 minutes or until a knife inserted into the centre comes out clean. Allow to cool then ice with your favourite cream cheese icing.


    Can also be made into 12-16 cupcakes by pouring into a muffin tin lined with paper baking liners.

    Hi Cattleya - what a lovely moist cake this makes! I am a big fan of the coffee/banana combo so this was a treat. I did need to make two cakes, however, to get the height that I wanted so next time I willl probably double this recipe I paired it with a coffee buttercream frosting.  -  13 May 2018
