Banana Pikelets

    This tasty twist on pikelets has mashed banana and vanilla mixed in. Serve buttered with your favourite toppings for a delicious treat, any time of day.

    Makes: 20 pikelets

    • 1 1/2 cups plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 egg
    • 1/2 cup caster sugar
    • 1 ripe banana, mashed
    • 1/2 teaspoon vanilla
    • 3/4 cup milk
    • 1 tablespoon butter, melted

    1. Sift together flour, baking powder, soda and salt. In a separate bowl beat together egg and sugar. Beat in banana and vanilla then stir in flour, alternately with milk. Stir in butter.
    2. Heat a frying pan or girdle and grease lightly. Drop in spoonfuls of the mixture into the frying pan and allow to cook until the edges begin to bubble and dry. Flip and cook until golden brown on bottom.
    3. Serve buttered, drizzled with golden syrup or with jam and whipped cream.
