Grated New Zealand yams mixed with arrowroot then deep fried in hot oil until crisp and delicious. Season with salt and serve with your favourite sauce.
oil, for frying
2 cups raw yams, grated
1/2 cup arrowroot
salt and white pepper, to taste
- Preheat a deep fryer or a wok of hot oil.
- Mix together yams and arrowroot then season with salt and pepper.
- Carefully drop spoonfuls of the batter into the hot oil and fry, 3 or 4 at a time, until they float to the surface, drain on newspaper then serve.
New Zealand yams are usually only available in New Zealand and South America. They are sometimes known as oca and are a small vegetable with the flavour of a lemony parsnip.
