A quick and easy dish that can either be a side to any meal or a plant based main, as it's a full protein. It is also great with leftover rice.

Serves: 3 

  • 1 cup uncooked white rice
  • 2 cups water
  • 1 (420g) tin cannellini beans
  • 2 tablespoons chilli powder
  • salt and pepper, to taste

Preparation:2min  ›  Cook:15min  ›  Ready in:17min 

  1. Bring rice and water to a boil then cover and allow to simmer until all water is absorbed, about 15 minutes.
  2. Empty beans and their juice into a saucepan. Add chilli powder, salt and pepper. Cook until heated thought then serve the beans over the rice.

Cook's Note

Also great with leftover rice.
