Passionfruit Shortcake

    To die for shortcake layered with a light and fruity passionfruit filling made of passionfruit and icing sugar. Makes a great summer dessert.

    Serves: 6 

    • Cake
    • 130g butter
    • 130g sugar
    • 1 egg
    • 160g self raising flour
    • 130g plain flour
    • Icing
    • 1 teaspoon butter
    • 2 passionfruit
    • 1 teaspoon orange juice (optional)
    • icing sugar, as needed to make spreadable

    Preparation:25min  ›  Cook:30min  ›  Ready in:55min 

    1. Preheat oven to 130 degrees C.
    2. Cream together butter and sugar. Add egg then flour. Knead well then press into a sandwich tin. Decorate with almonds. Bake in oven for about 30 minutes.
    3. Icing

    4. Mix together butter, passionfruit, juice and enough icing sugar to make icing a spreadable consistency.
    5. Remove from tin while still hot. Slice in half and fill with icing.
