Curried Eggs

    This is such a simple recipe I don't know why I don't make it more often. Perfect to take to a barbeque or when you need to bring a plate.

    Serves: 8 

    • 6 hard boiled eggs
    • 1/2 teaspoon Keen's curry powder
    • 2 tablespoons mayonnaise
    • paprika, as required
    • finely diced parsley, optional

    Preparation:10min  ›  Ready in:10min 

    1. Peel the eggs and cut in half lengthwise. Remove yolks and place in a bowl. Add curry powder and mayonnaise then combine until smooth.
    2. Refill each egg half with the yolk mixture then arrange on a serving platter.
    3. Keep in the fridge until needed, sprinkle with paprika and parsley to serve.
