This is such a simple recipe I don't know why I don't make it more often. Perfect to take to a barbeque or when you need to bring a plate.
6 hard boiled eggs
1/2 teaspoon Keen's curry powder
2 tablespoons mayonnaise
paprika, as required
finely diced parsley, optional
- Peel the eggs and cut in half lengthwise. Remove yolks and place in a bowl. Add curry powder and mayonnaise then combine until smooth.
- Refill each egg half with the yolk mixture then arrange on a serving platter.
- Keep in the fridge until needed, sprinkle with paprika and parsley to serve.
