This is my simple 'go-to' salad when people are coming over. It is so easy to make and tastes great; also a good source of protein.

Serves: 2 

  • 2 tomatoes
  • 1 ball of fresh mozzarella
  • small handful basil leaves
  • good quality olive oil
  • good quality balsamic vinegar

Preparation:10min  ›  Ready in:10min 

  1. Cut tomatoes and mozzarella into slices. Layer alternately in a serving dish with the basil.
  2. Drizzle with the olive oil and balsamic vinegar to taste.
