Chewy Chocolate Chippies

    Chocolate chippies with chocolate bits and chopped nuts are baked until just right, then allowed to cool before eating, that makes the centre soft and chewy.

    Makes: 24 biscuits

    • 2 1/4 cups (280g) plain flour
    • 1 teaspoon bicarb soda
    • 250g butter, softened
    • 1/2 cup caster sugar
    • 1/2 cup brown sugar
    • 1 teaspoon vanilla
    • 2 eggs
    • 100-200g chocolate bits, to taste
    • 1 cup chopped nuts

    1. Preheat oven to 190 degrees C. Grease 2 baking trays.
    2. Sift together flour and bicarb soda, set aside. Cream together butter, sugar and vanilla. Gradually beat in eggs. Stir in flour. Fold in chocolate bits and nuts.
    3. Drop small spoonfuls onto baking tray. Top with extra nuts and chocolate bits, if desired. Bake for 10-12 minutes in preheated oven.

    Cook's Variation

    2 tablespoons of cocoa may be added with the flour for a chocolaty biscuit.

    Ooey, gooey and oh so chocolately! What more could you ask for from a cookie? For the chopped nuts I opted to use walnuts. After they came out of the oven to cool, I drizzled them with extra melted chocolate to take these over the top! Be sure to have a tall glass of milk on hand for these!  -  09 May 2013
