A tasty bacon and zucchini quiche without a pastry base. Chock full of grated zucchini, cheese and bacon then topped with fresh sliced tomatoes. Baked until set.
Beat together eggs and oil. Mix in the zucchini and onion. Whisk in the flour then fold in the cheese. In a greased pie dish, lay in the bacon. Pour in the egg mixture then place a layer of tomatoes on top.
Bake in oven until egg is set and top is golden, about 30 minutes.
