Wheat bulghur, soy grits, fresh onion, celery, carrots and mushrooms are all simmered together with stock and tarragon to make a tasty meat free meal.

Serves: 4 

  • 1/4 cup oil
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 1 clove garlic
  • 1 1/2 cups raw bulghur wheat
  • 1/4 cup soy grits
  • 1/2 teaspoon salt
  • 2 teaspoons tarragon
  • 3 cups stock, hot

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. In oil, saute onion, celery, carrots, mushrooms and garlic until onion softens and volume of veggies decreases.
  2. Stir in bulghur, grits, salt and tarragon.
  3. Add the stock and bring to a boil. Stir then cover and simmer for 20 minutes, or until all water is absorbed.

Soy grits

Soy grits are available in health food shops.
