Spiced Chocolate Slice

    A tasty slice with a rich base that is topped with apricot jam then a buttery mixture of cocoa and mixed spice. You can serve it plain or top with icing and nuts.

    Serves: 12 

    • Base
    • 190g plain flour
    • 1/2 teaspoon baking powder
    • 1 dessertspoon sugar
    • 1 pinch of salt, to taste
    • 90g butter
    • cold water, to bind
    • 1 squeeze lemon juice
    • 1/2- 1 cup apricot jam
    • Topping
    • 2 tablespoons butter
    • 1/2 cup sugar
    • 1 teaspoon vanilla
    • 1 cup self raising flour
    • 1 dessertspoon cocoa
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon spice
    • 1 egg
    • 1/2 cup milk

    1. Preheat oven to 220 degrees C.
    2. Base

    3. Sift together dry base ingredients. Rub in butter. Mix into a dry dough with water and lemon juice. Press into a slab tin then spread on the apricot jam.
    4. Topping

    5. Cream butter and sugar with essence. Add egg then beat well. Sift flour, cocoa, cinnamon and spice into the mixture, while gradually adding milk. Spread over the base.
    6. Bake in a preheated oven for 20-25 minutes. Allow to cool then ice with your favourite icing and top with nuts.
