Basic Meringues

    Simple meringue recipe that is so quick and easy, you will wonder why you never made them before. This recipe allows for you to add colour or flavours if you like to experiment.

    Serves: 6 

    • 4 egg whites
    • 1 dessertspoon water
    • 1 pinch salt, to taste
    • 8 tablespoons sugar
    • 1 teaspoon brown vinegar

    1. Preheat oven to 130 degrees C.
    2. Whip egg whites and water until stiff. When thickens a little, sprinkle in salt and sugar slowly. Put in a teaspoon brown vinegar then whip for a short time.
    3. Place dollips of the mixture onto a baking tray. Bake in preheated oven, 3rd shelf up, for one hour. Turn off oven, leave door closed and leave meringues in oven for at least 1 hour more.

    Cook's Variation

    Add one teaspoon cinnamon and one teaspoon rum to the cream. Then grate chocolate over the top before baking.
