This recipe makes 3 rich and fruit filled steamed Christmas puddings. Loaded with brandy soaked mixed fruit, raisins, currants, sultanas, figs and peel.
Soak mixed fruit, raisins, currants, sultanas, figs and mixed peel in brandy overnight. Cream butter and sugar, add eggs, flour, breadcrumbs, salt, spice, fruit, almonds then brandy.
Divide mixture into 3rds. Dip 3 pudding cloths in boiling water, drain then put pudding in. Plunge puddings into the rapidly boiling water.
Boil rapidly for 4 hours with the cut lemon (to keep the butter from boiling out). Make sure to keep water level above the puddings by adding more boiling water out of the jug as needed.
