Moist gingerbread loaf spiced with ginger, cinnamon and mixed spice makes a tasty snack or a nice dessert. Serve iced with your favourite lemon icing.

Makes: 2 loaves

  • 1 1/2 cups plain flour
  • 1/2 cup self raising flour
  • 1 teaspoon bicarb soda
  • 2 teaspoons ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon mixed spice
  • pinch salt, to taste
  • 1 cup sugar
  • 2 eggs, beaten
  • 1 cup milk
  • 130g butter
  • 1 cup golden syrup

Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min 

  1. Sift together flour, bicarb soda, ginger, cinnamon, mixed spice and salt. Add sugar, beaten eggs and milk, then mix will.
  2. Pour butter and golden syrup into a saucepan, stir into flour mixture, mix until well combined.
  3. Pour evenly into 2 greased and paper lined loaf tins. Bake at 180 degrees C for 50 minutes. Ice with lemon icing.
