Cucumber and Yoghurt Dip

    This is a healthy and easy recipe that I make frequently when people pop over. Serve with crackers, basic biscuits or vegetable sticks.

    Serves: 6 

    • 1 cucumber
    • 150g yogurt
    • 1 clove garlic, crushed
    • 1 tablespoon diced fresh mint
    • 1 pinch pepper

    1. Grate the cucumber then place in a sieve and press gently to remove excess moisture.
    2. Mix cucumber, yoghurt, garlic, mint and pepper. Refrigerate until needed.
