Half Size Christmas Cake

    This smaller version of the traditional Christmas fruit cake is perfect for smaller families or even if you are wanting Christmas cake during the rest of the year.

    • 190g flour
    • 1/4 teaspoon salt
    • 1 teaspoon mixed spice
    • 1 teaspoon nutmeg
    • 1 teaspoon cinnamon
    • 1/2 teaspoon ground cloves
    • 60g ground almonds
    • 190g unsalted butter
    • 160g brown sugar
    • 4-5 large eggs
    • 1 lemon, juiced and zested
    • 4 tablespoons brandy
    • 250g currants
    • 250g raisins
    • 250g sultanas
    • 130g glace cherries
    • 60g almonds, chopped

    1. Preheat oven to 150 degrees C. Line a cake tin with greaseproof baking paper.
    2. Sift together flour, salt, mixed spice, nutmeg, cinnamon, clove and ground almond. Beat together the butter, sugar, eggs, lemon juice, lemon zest and brandy. Combine wet and dry mixtures then fold in the remaining ingredients.
    3. Pour mixture into prepared cake tin, set cake tin on a baking tray then bake in preheated oven for 4 hours, checking half way though to insure proper browning. Allow to cool on a cake rack.


    If your cake is browning too fast, cover it with baking paper after about 2 hours.
