Scotch Bun

    Sometimes called a black bun, the Scotch bun is a dried fruit cake with a pasty crust that has always been served around new years in our family. Enjoy.

    Serves: 6 

    • Pastry
    • 190g flour
    • 1/2 teaspoon baking powder
    • 90g butter
    • 20g sugar
    • pinch of salt, to taste
    • Filling
    • 1kg dried fruit
    • 60g peel
    • 130g chopped almonds
    • 250g flour
    • 130g sugar
    • 20g mixed spice
    • 10g cream of tartar
    • 10g bicarb soda
    • 1 egg
    • milk, to moisten
    • 1 egg, beaten

    1. Grease a cake or loaf tin. Preheat oven to 180 degrees C.
    2. Combine the flour, baking powder, butter, sugar and salt. Mix to make a thick dough then roll out very thin. Line greased tin, reserving enough to cover the top.
    3. Mix all filling ingredients and moisten with a bit of milk. Spoon into the pastry lined baking tin then cover with remaining pastry.
    4. Prick the top with a fork, brush with the beaten egg then bake in preheated oven for 2-2 1/2 hours.
