These high fibre date and bran muffins have a hint of nutmeg and lemon zest. Start your day right with a healthy muffin that is chock full of delicious dates.
Preheat oven to 200 degrees C. Grease two muffin trays.
In a large mixer bowl, combine flour, butter and sugar. Mix until well combined then add dates, bran, lemon zest and nutmeg. mix well then add egg and milk.
Pour into the muffin trays then bake in preheated oven until a toothpick inserted into the centre comes out clean, about 18 minutes.
