Date and Bran Muffins

    Ingredients
    Makes: 30 muffins

    • 2 cups (300g) self raising flour
    • 60g butter, softened
    • 2/3 cup (160g) sugar
    • 2 cups (360g) dates, diced
    • 2 cups (180g) unprocessed bran
    • 1 tablespoon lemon zest
    • 1/2 teaspoon nutmeg
    • 2 eggs, beaten
    • 1 cup (250ml) milk

    1. Preheat oven to 200 degrees C. Grease two muffin trays.
    2. In a large mixer bowl, combine flour, butter and sugar. Mix until well combined then add dates, bran, lemon zest and nutmeg. mix well then add egg and milk.
    3. Pour into the muffin trays then bake in preheated oven until a toothpick inserted into the centre comes out clean, about 18 minutes.
