Cannellini Bean and Tuna Salad

A great combination of tuna, olive oil, lemon juice and cannellini beans. Serve as a side dish or a light lunch.

Serves: 2 

  • 100g frozen beans, thawed
  • 1 (185g) tin tuna in water, drained
  • 1/2 (400g) tin cannellini beans, drained
  • 1 red onion, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons freshly grated Parmesan cheese
  • salt and freshly ground black pepper to taste

  1. In a large bowl, mix together beans, tuna, cannellini beans, onion, olive oil, lemon juice, garlic and cheese. Season to taste with salt and black pepper. Cover and chill in the refrigerator for about 2 hours.
