Fried Hoki with Chives

    A quick and simply way to fry up this affordable fish. Lightly dusted with flour, the hoki is fried in butter then served drizzled with chive and butter sauce.

    Serves: 4 

    • 1kg hoki
    • salt and pepper, to taste
    • 1 tablespoon flour
    • 100g butter
    • 2 tablespoons chives, chopped

    1. Season hoki with salt and pepper. Dust with flour.
    2. Heat 1/4 the butter over medium high in a frying pan. Fry the fish on both sides until it is cooked through and flakes easily. Remove the fish from frying pan and wipe frypan clean.
    3. Melt the remaining butter with the chives then pour over the fish to serve.


    Hoki is a white fish found in NZ. You can use tarakihi, cod or any other white fish if you prefer.
