New Zealand Cheese Rolls with Bacon

Cheese rolls, (or southern sushi) were one of my fav's growing up (unless some egg put onion in them). Here is my very grown-up twist to this classic, with bacon!

Makes: 14 Rolls

  • 2 rashers of bacon
  • 2 tablespoon diced onion
  • 1 cup tasty cheese, grated
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped parsley
  • 14 slices of fresh white bread
  • 30g butter, melted

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Cook bacon until crisp, then drain on news paper. Dice into small bits and then mix with cheese, mayonnaise and parsley.
  2. Preheat oven to 180 degrees C. Cut the crusts off the bread then roll it out flat. Spread on the cheese mixture then roll up and pin closed with a toothpick.
  3. Place on a baking tray and bake until golden brown, about 10 minutes. Serve.


These are also great with pineapple. Yummy!
