A mutton casserole that uses your favourite frozen vegetables is slow cooked in the oven until the meat is tender and delicious. Could also adapt for your slow cooker.

Serves: 4 

  • 1 1/2 cups stock
  • 2 tablespoons flour
  • 2 tablespoons chutney
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 tablespoons brown sugar
  • 1 tablespoon Worcester sauce
  • 1 tablespoon vinegar
  • 1kg leg or shoulder mutton, diced
  • 1 onion, diced
  • 1 cup frozen vegetables

Preparation:15min  ›  Cook:1hour30min  ›  Ready in:1hour45min 

  1. Preheat oven to 180 degrees C.
  2. Combine stock, flour, chutney, soy sauce, salt, brown sugar, Worcester sauce and vinegar in a casserole dish then mix to combine. Add the mutton and onion.
  3. Cover and place in preheated oven and allow to cook for 1 hour. Remove from oven, stir in the frozen vegetables then cover and cook for 30 additional minutes. Serve with mashed potatoes.
