This is a classic Chinese soup with very simple ingredients - if you can find fresh lotus root! It's often available at Chinese shops and the market.


Serves: 4 

  • 400g boneless pork spare ribs
  • 2 tomatoes
  • 1 lotus root
  • 3-4 large slices ginger
  • 6 cups water, or as needed
  • salt to taste

  1. Soak the ribs in cold water for 10 minutes and rinse well. Put the ribs into a pot of cold water, bring to the boil and skim the foam. Drain.
  2. Boil 4 cups water, add the ribs and ginger, cover and simmer for 1 hour. Dice the tomatoes and slice the lotus root.
  3. After 1 hour, add the tomatoes and simmer another 30 minutes. Add the lotus root and simmer for another 40 minutes. Season with salt and serve.
