Kumara and Tomato Soup

    A delicious tomato based soup loaded with diced kumara and bacon. Seasoned with basil, thyme and rosemary for a delicious dinner.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 large onion, diced
    • 5 rashers streaky bacon, diced
    • 4 cloves garlic, minced
    • 500g purple kumara, peeled and diced
    • 1 (800g) tin diced tomatoes
    • 3 cup chicken stock
    • 1/4 cup tomato paste
    • 4 basil leaves
    • 1 sprig rosemary
    • 2 sprigs thyme
    • salt and pepper, to taste

    1. Heat oil in a large saucepan then saute the onion and bacon until bacon begins to brown. Drain off any fat then stir in the garlic and kumara.
    2. Pour in the tomatoes, stock, tomato paste, basil, rosemary and thyme. Bring to a boil then simmer, covered slightly, for about 30 minutes.
    3. Season to taste with salt and pepper then serve.


    Kumara is known in Australia as a sweet potato.

    Loved this.. wasn't able to find purple kumara, so I used orange. Also used turkey peppered bacon  -  29 May 2013
