Easy Thai Meatball Salad

    I cooked this recipe in our cooking class in school. when i taste good and its easy to do. and lastly its so healthy.for me this is the best choice of making a salad. :)

    Serves: 2 

    • 180g mince beef
    • 1/3 t ground coriander
    • 1/3 t ground cumin
    • 2 T chopped fresh coriander
    • 1 1/2 sweet chilli sauce
    • 1/2 egg beaten
    • 4 T olive oil
    • 1 T brown sugar
    • 1/2 grated lemon rind
    • 3 T lemon juice
    • 1/3 red chilli, thinly sliced
    • 2 T chopped mint
    • 1 T Thai sauce
    • 100g spinach
    • 4 cherry tomatoes, halved
    • 1/6 red onion, thinly sliced
    • 1/2 Lebanese cucumber, thinly sliced

    1. MEATBALLS: Combine the mince, ground coriander, ground cumin, chopped coriander, sweet chilli sauce, egg, 2 T olive oil in a small bowl. Mix well. Wet hands and roll teaspoons of mixture into balls. Heat oil in pan, cook meatballs until brown all over and cooked through. Drain on absorbent paper.
    2. DRESSING: combine the 2 T olive oil, brown sugar, lemon rind, lemon juice, red chilli, chopped mint, Thai fish sauce in another bowl.
    3. Add two thirds of the dressing to the meatballs in a bowl; toss well.
    4. Combine spinach, tomato, onion and cucumber in a bowl. Add meatballs and remaining dressing and toss gently to combine.
    5. Serve.
