Chilli Con Carne with Beans

    Chilli con carne y frijoles means chilli with meat and beans. This spicy chilli is loaded with 3 kinds of beans, tomaotes and beef mince. Enjoy with sour cream and cheese.

    Serves: 8 

    • 1 onion diced
    • 2 tablespoons olive oil
    • 500g beef mince
    • 4 clove garlic, crushed
    • 2 (400g) tin diced Mexican style tomatoes, undrained
    • 1 jalapeno chilli, diced, seeds removed (optional)
    • 1 (400g) tin black beans, drained and rinsed
    • 1 (400g) tin kindy beans, drained and rinsed
    • 1 (400g) tin borlotti beans, drained and rinsed
    • 46g chilli con carne seasoning
    • 2 tablespoons chilli powder
    • salt, to taste
    • 1 pinch coriander, to taste
    • 1 pinch cayenne pepper, to taste
    • 2 chicken stock cubes
    • 2 cup water
    • cheese and sour cream, serve

    1. Heat olive oil in a frying pan then saute onion until tender. Brown mince then stir in garlic.
    2. Transfer to a slow cooker then add tomatoes, chilli, beans, seasoning, chilli powder, salt, coriander, cayenne, stock and water. Cover and allow to simmer on low heat for 4-8 hours.
    3. Serve topped with cheese and sour cream.
