Twice Baked Potatoes

    When I was little I called these "special potatoes" and to be honest, I still do. Loaded with tasty cheese and white pepper these are a special treat to have with dinner.

    Serves: 4 

    • 3 medium potatoes
    • 1 cup tasty cheese, grated
    • 60g butter
    • 1/4 small onion, diced
    • 2 tablespoons chopped parsley
    • 1 teaspoon chives
    • salt and white pepper, to taste

    1. Preheat the oven to grill. Lightly spray a baking dish with cooking spray.
    2. In a microwave save bowl, cook the potatoes in a tablespoon of water for about 6 minutes. Remove and turn over then cook until soft to the squeeze, about 4 more minutes.
    3. Slice potatoes in half and gently scoop out the 'meat' of the potato into a large bowl, without damaging the skin. Place the skins into the greased dish.
    4. In bowl add cheese, butter, onion, parsley, chives, salt and pepper. Mash up with a fork until smooth. Spoon back into the skins and place under the preheated griller until tops are golden brown, about 10 minutes.
