Layered with a sweet creamy orange filling, this apricot and nut bread is unlike any you have tried before. No butter needed to serve this bread, it's so moist.
Preheat oven to 190 degrees C. Grease a loaf tin. Soak dried apricots in a bowl of hot water for 15 minutes, then drain.
Mix 2 cups flour, 1 cup sugar, baking powder, salt and bicarb soda. Slowly mix in butter, 1 egg, orange juice, chopped nuts and apricots. Set aside.
In a separate bowl mix together cream cheese, 1/3 cup sugar, 1 tablespoon flour, 1 egg and orange peel.
Pour 1/2 the bread batter into greased loaf tin then pour in the cream cheese mixture, then layer with the remaining bread mixture. Bake in preheated oven for about 50 minutes.
