Green beans, tomato and onion smothered in a homemade basil pesto sauce makes a great vegetable side dish for a special party, potluck or just a family dinner.


Serves: 6 

  • 750g green beans
  • 2 onions, diced
  • 6 tablespoons olive oil, divided
  • 4 tomatoes, peeled, seeded and diced
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup parsley

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Boil beans in a saucepan of water for about 10 minutes then drain.
  2. Saute onions in 4 tablespoons of olive oil until soft then add tomato and beans. Remove from heat.
  3. In a food processor combine basil, garlic, parsley and 2 tablespoons olive oil. Process well then pour over the green bean mixture.

Quite tasty. I had some leftover homemade pesto so I used that on top and I had some leftover tomato sauce so I added that with the tomatoes. - 05 Jan 2014
