In a sauce pan, add the rice and 2 cups of water. Bring to a boil, cover, reduce heat then simmer until all water is absorbed, about 40 minutes.
Pour the gravy packet into a small saucepan with 1 cup of cold water and whisk well. Bring to a boil, simmer for about 1 minute then set aside.
In a frying pan over medium high, fry the Spam until golden on each side. Set aside. Pour the olive oil into the frying pan then crack the eggs in, cover and allow eggs to cook to over easy or over medium, about 3-5 minutes.
On each plate put a scoop of rice, top with the spam then smoother with the gravy. Top with the egg.
You can make this meal in about 15 minutes if you use leftover rice or instant rice.
This dish it traditionally made with a beef mince patty, but I prefer to use spam, you can use what you are most keen on.
