Eggs scrambled with cherry tomatoes, red capsicum, olives, spinach and feta cheese. Served with an English muffin this is a delicious breakfast treat.


Serves: 4 

  • 7 eggs
  • 3/4 cup low fat milk
  • 2 tablespoons olive oil
  • 1/2 red capsicum
  • 20g olives, halved
  • 8 cherry tomatoes, halved
  • 1 cup English spinach leaved, chopped
  • 1/4 cup feta cheese
  • 4 English muffins, toasted

  1. Beat together eggs and milk. In a frying pan heat olive oil over medium high. Stir in capsicum, olives and tomatoes. Cook about 2 minutes then pour in eggs. Cook for about 2 more minutes then stir in the spinach. Cook until eggs a cooked though, stirring often. Sprinkle with feta then serve with English muffin.
