Caramel Apple Pie

    With cinnamon, ginger, orange peel and gooey caramel, this mean apple pie tastes like... autumn weather. I set it out to cool, but nek minnut, it was gone.

    Serves: 6 

    • 2 sheets shortcrust pastry
    • 90g butter
    • 5 apples, peeled, cored and thinly sliced
    • 1 teaspoon cinnamon
    • 1 teaspoon ginger, grated
    • 1 teaspoon orange peel, grated
    • 1/4 cup brown sugar
    • 15 soft caramel lollies
    • 1/4 cup cream, to taste
    • milk, to brown crust

    1. Preheat oven to 220 degrees C. Grease a pie tin then line with 1 sheet of short crust pastry.
    2. Melt butter in a frying pan then stir in the apples. Stir in the cinnamon, ginger, orange peel and brown sugar. Continue to stir until apples begin to soften.
    3. In a small sauce pan heat the caramels and the cream. Continue stirring until melted and combined. Pour into apple mixture then stir to combine.
    4. Pour apples into the pie case then top with the remaining short crust. Seal well then cut off excess pastry. Brush top with milk. Bake in preheated oven to for about 35-45 minutes.


    Cover the edges of the pie crust with aluminium foil during baking and you will be sure to have a pie that is golden brown all over. (You can see in my photo, I forgot this step).
