Spiced with cinnamon, brown sugar, orange zest and ginger, this kugel is amazing. It has fresh apples, raisins, matzo, eggs and golden syrup. Great dessert.

  • 1 1/2 matzo sheets, crushed
  • 2 small apples, peeled and thinly sliced
  • 2 eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon grated orange peel
  • 1/4 teaspoon ginger
  • 2 teaspoons raisins
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon golden syrup
  • 1/8 teaspoon lemon juice

Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

  1. Preheat oven to 180 degrees C. Soak matzos in hot water for 2 minutes. Drain, squeeze lightly then set aside.
  2. Beat eggs, cinnamon, vanilla, orange peel, ginger, white sugar, brown sugar and golden syrup together in a medium bowl. Stir in the raisins, apples, matzo and lemon juice.
  3. Pour into two individual ramekins then cook in preheated oven until apples are softened, about 45 minutes.
