Orange Cake

    For a newbie cook, this is a very easy orange cake made from scratch.

    Serves: 8 

    • 1 cup vegetable oil (I use vegetable oil as I can't find butter in this part of the world)
    • 1 cup sugar
    • 2 eggs
    • 1 tsp. nutmeg
    • 1 tsp. cinnamon
    • 1 tsp. baking powder
    • a pinch of salt
    • 2 cups flour, sift
    • 2 cooled boiled oranges
    • milk (I used milk to get the "perfect" consistency of the batter.)
    • icing Sugar

    1. Preheat oven to 180 - 200 degrees C. I have small conventional oven (same size as microwave)
    2. Wash and boil 2 oranges. Let it cool. Process.
    3. In a bowl combine vegetable oil and sugar and mix until soft, light and fluffy. Add eggs, cinnamon, nutmeg and pinch of salt. Mix. Then, add baking powder, flour and processed oranges. Fold until nice and smooth.
    4. Pour the batter over the cake tin and bake for 50 - 60 minutes, or until skewer inserted into the middle of cake comes out clean. Cool for 10 minutes and remove from tin and cool on wire rack.
    5. Sprinkle with icing sugar before slicing and serving.


    Always, preheat your oven at least 20 minutes before baking.

    Beautifully moist. I used melted butter and selfraising flour instead of the oil and flour and baking powder.  -  05 Mar 2015
